Pasta Fagioli

So easy, so quick, so good! This is a simple one pot version of a classic, perfect for a weeknight dinner or weekend lunch. If you won’t be serving it right away, you can cook the pasta separately and add it just before serving.
Serves 4-6
Ingredients
- 2 stalks of celery chopped
- 1 onion chopped
- 3 cloves garlic minced
- 2 tsp dried parsley
- 1 tsp Italian seasoning
- 1/4 tsp crushed red pepper flakes
- 1 tbsp olive oil
- 1 (14-15oz) can chicken broth
- 1 (15oz) can chopped tomatoes
- 1 (8oz) can tomato sauce
- 3/4 cup pasta
- 1 (14-15oz) can cannellini beans with liquid
Cook celery, onion, and garlic in oil til’ tender, while cooking add parsley, Italian seasoning, and pepper flakes.
Add chicken broth, chopped tomatoes, and tomato sauce and heat to boil.
Add pasta and simmer till cooked (8-10 min).
Add cannellini beans and heat through.
Serve topped with shredded Pecorino Romano and bread.
