So easy, so quick, so good! This is a simple one pot version of a classic, perfect for a weeknight dinner or weekend lunch.
Slightly sweeter than a traditional English scone and with a flaky texture, this Yankee version goes great with tea or coffee.
This recipe makes a tasty breakfast or brunch. It can be a side or main dish.

Wash and peel potato and peel onion. Mince onion and grate potato coarsely. Mince garlic. Mix the potato, onion, garlic, and salt together and place in a strainer to drain for ten minutes.
Dice the kimchi into 1/4″ to 1/2″ pieces.
Squeeze the potato mixture firmly with your hands to remove as much moisture as possible. Place in a bowl and microwave on high for one minute. Remove and let cool slightly.
Add the kimchi and pepper to the potato mixture, mix together well.
Heat the butter in a large skillet over medium heat. Add the potato mixture and spread out into an even layer. Cook until the bottom begins to brown. Now flip, mix, and continue cooking until cooked through.
Add optional toppings if desired, serve, and enjoy.
